At the RESTAURANT of our farmhouse we serve dishes prepared with all the beautiful products of the farm and of other selected companies in the area. The goodness of basic ingredients is an essential condition. When cooking them, these ingredients are enhanced without distorting their original essence. On the palate, our dishes are delicious, harmonious, well balanced, evoking ancestral memories related to your childhood.
“Le Ciaie” EXTRA VIRGIN OLIVE OIL is used to prepare all our dishes, both for cooking and for seasoning them, but also for frying. A careful SELECTION OF CURED MEATS, such as CORIANDER SAUSAGES, the CAPOCOLLO, PANCETTA, as well as FRESH CHEESES, such as BUFFALO MOZZARELLA OF CAMPANIA DOP, MARZOLINO, RICOTTA… and BATTERED FRIED VEGETABLES are included in our MENU.
And then also: the CICERCHIE of CAMPODIMELE, used to prepare delicious soups with aromatic herbs, FRESH EGG PASTA, stuffed with ricotta and herbs, FRESH BROAD BEANS PESTO with mint and pecorino, GNOCCHI WITH EGGPLANTS AND CACIORICOTTA , ARTICHOKE AND SAFFRON RISOTTO IN A BURRATA SAUCE…
and MEAT, of our own production or supplied by selected companies, preparaed for WOOD OVEN COOKING, such as LAMB WITH POTATOES, TURKEY ROLLATINA, “Valle Quercia” white wine BRAISED PORK; EARTHENWEAR GRILLED MEAT, CHIANINA STEAK TAGLIATA, LAMB CHOPS, CHICKEN HIPS… all accompanied by aromatic herbs;
the VEGETABLES grown in our GARDEN are widely used, enough to create entire VEGETARIAN MENUS without any difficulty: MISTICANZA and DRIED FRUIT SALAD, MINT GRILLED VEGETABLES, SWEET and SOUR CAPONATA, EGGPLANT PARMIGIANA, FRESH OREGANO STUFFED ZUCCHINI, COUSCOUS STUFFED TOMATOES…
And finally, our DESSERTS prepared with fresh fruit, such as FRUIT BAVARESE, SORBETS, LEMON DESSERT SAUCES, ORANGE CREAM PUFFS, SAVARAIN WITH WILD STRAWBERRIES… Also, with our food and wine matching,the taste of all our dishes is enhanced: “Valle Quercia” IGT CHARDONNAY, “Valle Quercia” IGT CABERNET or VERNACCIA, SANGIOVESE, SHIRAZ and MONTEPULCIANO in all the combinations created by Valerio’s imagination.
